Pesto Spiral Salad 

I made this just after I found an old housemate had left a spiraliser in the cupboard and decided I immediately had to spiralise whatever I could get my hands on (which ended up literally being my hands, these things are vicious)

Anyway, spiralising an entire cucumber seemed like a good place to start and before you know it this salad was created. It’s become an obsession and now I’m sat on a train wondering would spiralised red peppers work and would a butternut squash be a ridiculous amount of effort?!

Ultimately I’ve discovered there is no limit to what you could spiralise (but perhaps a limit on what you should)

Serves 2  (sp per serving)

Ingredients

Salad 

  • 1 cucumber
  • 1/2 ball low fat mozzarella 3
  • 1 red pepper roughly chopped
  • 1/2 avocado roughly chopped 5
  • Handful cherry tomatoes
  • Half a bag of rocket
  • 2 spring onions finely sliced

Pesto

  1. Bunch basil
  2. 2 tbsp olive oil 9
  3. 2 garlic cloves
  4. 30g nuts of some sort 7

Method 

  1. Roughly chop your pepper and avocado, slice your toms in half and spiralise your cucumber!
  2. Now make your pesto – add all ingredients to a blender and blend until fully mixed, if it’s a bit thick or not sticking together add a bit more oil
  3. In a large bowl add rocket, your chopped peppers and avocado, the cucumber and mozzarella. Cover in the pesto mix and stir until everything is covered
  4. Sprinkle over your spring onions
